Q: how do you hold it for smaller then 10" pots? Seems there would be overhang

You are absolutely correct. This kitchen tool is very poorly designed. I am an aerospace engineer and had to design a handle for it. Even with the handle, it is not easy to use without spillage. I have used vice grips as a temporary handle and it worked fine. I hope this helps.
